Heirloom squash produces lots of oblong, medium-sized 3-4 lb fruits. The flesh can be served like spaghetti – an instant hit with the kids. CULINARY TIP: Slice fruit lengthwise, scoop out seeds, brush with olive oil and season with salt and pepper, roast face down until flesh falls away from shell with a fork for a spaghetti look. Serve with marinara sauce or season to taste. Can be stored for several months in a cool, dry place.
