Fresh Kefir Grains
Water kefir is a slightly fizzy and refreshing fermented beverage, usually made from kefir grains which are symbiotic bacterial and yeast cultures. Kefir grains are added to sugar water and left to ferment for 24 to 48 hours. During this process, microbes in the kefir grains consume the sugar, producing acids and gases that give the drink its slightly tart, fizzy taste. Water kefir is often described as having probiotic properties that benefit digestive health, strengthening the immune system and supporting healthy digestion. It can also be flavored with fruits, herbs or spices to create a variety of flavors.
First, remove the gelatinous grains from the shipping container and place them in a glass jar large enough to hold 2 cups of liquid. Add 1 1/2 cups water and 1/4 cup brown sugar to the pot. Make sure to avoid using raw honey, as this will damage the water kefir grains. Then mix everything together and cover the pot with breathable material to keep insects and dust out. Wait 20 to 48 hours, shaking the jar occasionally. When the kefir smells good, taste it to make sure it is less sweet than the original mixture. Next, remove the kefir grains and place them in a new sugar water solution to continue the process. Store kefir grains in the refrigerator. If you want to get charred kefir, put it in a tightly closed bottle. Feel free to experiment with different amounts of sugar or fruit. Every 20 to 48 hours, strain the kefir grains from the kefir water and add them to a new sugar water solution. After about 8 water changes, the grains may multiply, so be sure to adjust the amount of water and sugar accordingly. It is important not to use sugar substitutes, as grains feed on sugar. If your water contains chlorine or other contaminants, filter it before using it. Note that grains may take time to activate due to the stress of transportation. Avoid using distilled or low-mineralized water, as the grains prefer the minerals found in the water. Feel free to experiment with temperatures, sugar types, breathable lids, water sources, fruit juices, etc. to create your own kefir.
