This French heritage is a winner! Casper eggplant (Solanum melongena) produces beautiful white ghost fruits 5 to 6 inches long on compact plants. The flavor is sweet and tender and best eaten when small. Does well in cool climates too! (70 days from transplant) Learn how to grow eggplant here.

Planting and Harvesting Tips:
Start indoors 8-12 weeks before the last spring frost. Transplant outdoors once the soil has warmed up. Space plants 18 to 24 inches apart in raised beds or 2 to 3 foot double rows. The plants prefer full sun and fertile soil with plenty of organic matter.

To harvest large fruits, remove most of the side shoots and select two or three fruits to develop on one plant. For berries, let the plants develop naturally. Harvest while the fruit is young and shiny for best flavor. Cut fruit from plants with an inch of stem attached.
