Squash — Cucurbita pepo

Amber Cup

🌿 Description

Amber Cup squash is a compact variety that produces small, round to slightly flattened fruits with a beautiful warm orange color reminiscent of amber. Its flesh is dense, smooth, and slightly sweet, with a fine texture that becomes especially tender when cooked.

The plants remain relatively compact compared to large sprawling squash varieties, making them an excellent choice for small gardens, raised beds, and urban spaces. The fruits are ideally sized for individual use in the kitchen.

🎨 History

Amber Cup–type squashes have been selected to produce practical, flavorful, and easy-to-cook fruits. This type of squash combines strong productivity with an attractive appearance, both in the garden and on the plate.

It follows the tradition of autumn squashes appreciated for their rich flavor and culinary versatility, while being more compact than giant varieties.

🌱 Germination (adapted to Quebec climate)

In Quebec, it is recommended to start seeds indoors a few weeks before the last frost, especially in regions with a shorter growing season.

Sowing period

Indoor sowing: 3 to 4 weeks before the last frost
Outdoor sowing: after all risk of frost has passed, when the soil is well warmed

Method

Sow at about 2 to 3 cm (1 in) depth
Ideal temperature: 22–30 °C (72–86 °F)
Germination in 5 to 10 days

Transplant into the garden when the plants are strong and nighttime temperatures are milder.

🌿 Care

Amber Cup squash is easy to grow and provides good yields.

Exposure: full sun
Soil: rich, fertile, and well-drained
Watering: regular, especially during fruit formation
Spacing: allow room for the vines to spread

Well-nourished soil encourages higher production and better-tasting fruits.

✂️ Pruning Technique (compactness & production)

Light pruning helps direct the plant’s energy toward fruit production.

Pinch the ends of the vines after a few fruits have formed
Remove overly long or weak stems
Limit the number of fruits per plant to increase their size
Maintain good air circulation around the foliage

This promotes more uniform fruits and better ripening.

🍽️ Culinary Use

Amber Cup squash is especially valued for its flavorful flesh.

Smooth texture and slightly sweet taste

Perfect for:

soups and creamy soups
purées
oven roasting
stuffed squash dishes
autumn side dishes

Its practical size makes it ideal for individual portions.

🍸 Cocktail & Decoration

With its round shape and deep orange color, Amber Cup is also very decorative.

Autumn decorations
Natural centerpieces

⚠️ Toxicity

Amber Cup squash is fully edible.
As with all squash, avoid consuming any fruit that tastes bitter.
