Safflower is an annual species from the same plant family as the sunflower. This crop is suitable for arid or irrigated land cropping systems. Each seed germinates and produces a central stalk that does not elongate for two to three weeks, and develops leaves near the ground in a rosette, similar to a young thistle. Slow growth of seedlings in early spring often results in a weed crop. The strong central stems, with a varying number of branches, reach between 12 and 36 inches depending on environmental conditions. Safflower can compensate for hail damage with little yield loss once the branches have developed. This crop is more drought tolerant than small grains because it has a taproot that can reach 8 to 10 feet if subsoil temperature and moisture permit. Stiff spines develop on the leaf margins of most varieties around the flower bud stage and make walking in the field difficult.
